Chef Damira’s Radish Salad (Uzbekistan)

A refreshing, popular side dish on the Uzbek table. Make it right before you eat or there will be too much liquid seeping out from the radishes.
1 1/4 cup labne (a thick, strained yogurt) or Greek yogurt
3/4 cup water
1 large bunch radish, trimmed, halved, very thinly sliced
1 cup fresh cilantro leaves, minced
3/4 cup fresh dill, minced
2 tablespoons chopped garlic
1/2 teaspoon table salt
1 sprig fresh cilantro, for garnish
Whisk the labne and water together in a medium bowl. Add the radish slices, minced herbs, garlic, and salt. Stir to combine. Garnish with a sprig of cilantro.
